Recommended wine & cheese pairings

Open Air Dairy Cheddar | Funkstille Zweigelt

The Cheese:
This beautiful, creamy, full-flavoured cheddar comes from the Open Air Dairy in Littlebredy – a unique large-scale dairy farm in Dorset that milks cows in the field as they graze. Tom Foot and Neil Grigg produce exceptional milk from pasture-fed cows using mobile milking parlours. The result? A traditional Dorset cheddar with real depth and character.

The Wine:
Funkstille Zweigelt is Austria’s signature red grape, and this one is particularly lovely – plummy fruit with a distinctive black pepper spice running through it.

Why They Work Together:
The creamy richness of this cheddar needs a wine with personality, and the peppery, plummy notes of Zweigelt cut through the richness beautifully while complementing the cheese’s savoury depth. Recommended!

Heidi's Goats Cheese | Funkstille Grüner Veltliner

The Cheese:
Deliciously mild yet distinctive, Heidi’s is a firm goat’s cheese with a traditional cheddar-like texture. Made in Dorset from 100% local goat’s milk, it has that subtle goat character without being overpowering – perfect if you’re new to goat’s cheese or already a devoted fan.

The Wine:
Grüner Veltliner is Austria’s most celebrated native white grape, and Funkstille’s version is broad, ripe, and gently honeyed with beautiful freshness.

Why They Work Together:
The slightly honeyed richness of Grüner Veltliner balances the creamy, subtle goatiness perfectly. Both have character without shouting about it, and the wine’s freshness lifts the cheese while the honeyed notes echo its creaminess.

Ismay Dorset Brie | Furleigh Estate Bacchus Dry | Furleigh Estate Dorset Idyll

The Cheese:
Ismay is a rich, creamy cow’s milk brie with wonderful mushroomy notes, made by The Book and Bucket Cheese Company using 100% Dorset milk collected within 24 hours and made into cheese the same day. It’s proper artisan cheesemaking with serious attention to detail.

The Wines:
We’ve suggested two beautiful English wines from our local Furleigh Estate. The Bacchus Dry brings gooseberry and elderflower, while the Dorset Idyll offers honeyed citrus.

Why They Work Together:
Brie’s textured creaminess and mushroomy character create a backdrop for Bacchus’s gooseberry brightness – the flavours complement together beautifully. Alternatively, the Dorset Idyll’s honeyed citrus notes bring an elegant pairing to the fresh creamy cheese. Both pairings celebrate Dorset terroir at its finest!

Dorset Blue Vinny | Baccolo Rosso Appassimento

The Cheese:
Dorset Blue Vinny is a multi-award winning English blue cheese, little known outside the West Country. Made at Woodbridge Farm using a 300-year-old recipe with hand-skimmed milk from Holstein-Friesian cows, it’s exceptionally creamy with a mellow blue taste and flavoursome edible rind. This is blue cheese for people who think they don’t like blue cheese.

The Wine:
Baccolo Rosso is an Appassimento from the Veneto district of Italy – grapes are partially dried to concentrate flavours, creating a wine with rich dried fruit character, gentle sweetness, and velvety texture.

Why They Work Together:
Blue cheese needs a wine with enough richness and sweetness to balance its savoury intensity, and Appassimento is perfect. The dried fruit super ripe & rich red cherry flavours of Baccolo Rosso complements the creamy, mellow blue character of the Vinny, while the wine’s natural sweetness tempers the cheese’s saltiness.

Shakespeare Brie | Baron de Badassière Viognier

The Cheese:
“To Brie or not to Brie?” Shakespeare is a World Cheese Gold-winning sheep’s milk brie with velvety texture and deep complexity. It can be enjoyed young and slightly firm, or left to ripen to a soft, oozy brie with a strong earthy nose and mushroomy finish. This is sheep’s milk cheese at its most elegant.

Shop Shakespeare Brie

The Wine:
Baron de Badassière Viognier from Languedoc brings stone fruit, white flowers, and a gorgeous rich texture. Viognier is aromatic, expressive, and has the weight to stand up to rich cheeses.

Why They Work Together:
Sheep’s milk brie has more depth and complexity than cow’s milk versions, and Viognier has the aromatic intensity and textural richness to match it. The wine’s ripe peach & apricot fruit and floral notes complement the earthy, mushroomy character of ripened Shakespeare and bring the salty sharpness of the Brie to life.
